A proprietary blend of five kioke (wooden-barrel)–fermented soy sauces selected from around Japan. Clear soup with expansive umami, layered with clam dashi and a niboshi–kombu dashi made using Setouchi katakuchi iwashi (anchovy/sardine). A balanced, deep, harmonized shoyu profile.
