A tare built from five selected kioke (wooden-barrel)–fermented soy sauces sourced from five different breweries—raw soy sauce, tamari, saishikomi (double-brew), and koikuchi among them—paired with a carefully simmered clear chintan soup made from selected ingredients including domestic mature chicken, pork, niboshi, shellfish, and more. Topped with domestic pork rib chashu marinated in a sake-lees tare and cooked low-temperature, plus fragrant domestic pork shoulder chashu finished with hanging-roast technique.
